Molasses (the brown concentrated syrup prepared by heating the sugarcane juice) when centrifuged at high speed separates out sugar crystals which when is further processed produces white sugar crystals.
Refined brown sugar is made by mixing molasses to white sugar. One-cup of brown sugar provides approximately 183 mg of calcium and small amounts of iron, magnesium, potassium, selenium and manganese.
Unrefined brown sugar is less processed white sugar, which is allowed to retain some molasses in it, imparting the natural brown colour.
